14 - Pinch of salt
→ Assembly
15 - 1 egg, beaten (for egg wash)
16 - 1 tablespoon turbinado sugar (for sprinkling)
17 - Fresh clover blossoms or edible flowers (optional)
# How-To Steps:
01 - Whisk all-purpose flour, almond flour, sugar, and salt in a large bowl. Add cold cubed butter and use a pastry cutter or fingertips to blend until crumbly.
02 - In a small bowl, whisk egg yolk with 3 tablespoons ice water. Gradually drizzle into flour mixture and stir until dough just forms, adding more water if needed. Shape into a disk, wrap, and refrigerate for at least 30 minutes.
03 - Set oven temperature to 400°F. Line a baking sheet with parchment paper.
04 - Combine sliced plums, clover honey, turbinado sugar, cornstarch, vanilla extract, cinnamon, and a pinch of salt in a bowl. Toss gently to coat.
05 - On a lightly floured surface, roll dough into a 12-inch circle. Transfer to the prepared baking sheet.
06 - Arrange plum mixture in center of dough, leaving a 2-inch border. Fold edges over fruit, pleating as needed.
07 - Brush crust edges with beaten egg and sprinkle with turbinado sugar.
08 - Bake for 35 to 40 minutes until crust is golden and fruit filling bubbles.
09 - Drizzle warm galette with additional clover honey and garnish with fresh clover blossoms if desired. Allow to cool briefly before slicing.
