Tender tuna, crisp green beans, new potatoes, cherry tomatoes and soft-boiled eggs with a zesty vinaigrette.
# What You'll Need:
→ Proteins
01 - 7 oz canned tuna in olive oil, drained (about 200 g)
02 - 4 large eggs
→ Vegetables
03 - 7 oz green beans, trimmed (about 200 g; ~2 cups)
04 - 10.5 oz baby potatoes, halved (about 300 g; ~2 cups halved)
05 - 7 oz cherry tomatoes, halved (about 200 g; ~2 cups)
06 - 1.8 oz mixed salad greens (arugula, baby spinach), loosely packed (about 50 g; ~2 cups)
→ Other
07 - 3 oz black olives, pitted (about 80 g; ~1/2 cup)
08 - 2 small shallots, thinly sliced
→ Dressing
09 - 4 tbsp extra-virgin olive oil (1/4 cup; 60 ml)
10 - 1 tbsp red wine vinegar (15 ml)
11 - 1 tsp Dijon mustard
12 - 1 garlic clove, minced
13 - Salt and freshly ground black pepper, to taste
# How-To Steps:
01 - Bring a medium saucepan of salted water to a boil. Add the halved baby potatoes and simmer 10–12 minutes until just tender when pierced with a knife. Remove with a slotted spoon and set aside to cool slightly.
02 - Reuse the same boiling water; add the trimmed green beans and cook 2–3 minutes until bright and tender-crisp. Drain and immediately plunge into an ice bath to stop cooking, then drain again.
03 - Bring a small pot of water to a gentle boil. Lower the eggs in and simmer for 7 minutes for set whites and soft yolks. Transfer to ice water for 5 minutes, peel, and halve.
04 - In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, and a pinch of salt and pepper until emulsified. Taste and adjust seasoning.
05 - Drain the tuna thoroughly and break it into large, rustic chunks with a fork; avoid over-flaking to preserve texture.
06 - Arrange the mixed greens on a large platter. Top with halved potatoes, blanched green beans, halved cherry tomatoes, sliced shallots, pitted olives and tuna chunks, distributing ingredients evenly.
07 - Nestle the halved eggs over the salad, drizzle generously with the dressing, and finish with a crack of black pepper. Serve immediately.
